									<p>Worldwide Italian Cuisine Celebration from 21st to 27th November!</p>
<p>In March 2nd 2015, during the international exhibition ExpoMilan and the creation of the first forum for the Italian cuisine, the first pact between the institutions and the world of cooking was signed. A memorandum with the theme <strong>«Understanding for the promotion abroad of the quality Italian cuisine».</strong>.</p>
<p>The outcome, of this signed memorandum, is the <strong>«Week of Italian Cuisine in the World»</strong> with a purpose to project the quality, the identity and the perfection of Italian products and cuisine all over the world. The Ministry of Foreign Affairs and International Cooperation, the Ministry of Agriculture and Forestry, the Ministry of Education, in collaboration with the Ministry of Economic Development of Italy, officially support the mentioned attempt.</p>
<p>In the context of <strong>«Week of Italian Cuisine in the World»</strong>, there are over 1.300 scheduled events in 105 countries all over the world and they are coordinated by the external network of the Italian Ministry of Foreign Affairs. During the celebration week, the Italian television channels, RAI and MIPAAF, will be broadcasting live the scheduled events held by the representatives of the Italian cuisine from different countries.</p>
<p>Mare e Monti, as an original representative of the Italian hospitality and cuisine, participates in the <strong>«Week of Italian Cuisine in the World»</strong>, by holding a Live Cooking of the famous Pastra Amatriciana from Pasquale Lembo in Monday 21 November and with a spectacular menu created specifically for the week.</p>

<p>Έτσι μέσα στα πλαίσια της κοινωνικής ευθύνης, με κάθε παραγγελία <strong>Pasta Amatriciana</strong> δωρίζουμε <strong>2€</strong> από κοινού ( 1€ η επιχείρηση + 1€ ο πελάτης) στην πληγείσα περιοχή μέσω του Ιταλικού Ερυθρού Σταυρού . Η ενέργεια αυτή θα κρατήσει για ένα μήνα.</p>

									<p><strong>Instructions</strong></p>
<p>Wash the eggplants thoroughly and then pat them dry. Remove the stalk and leaves from their top and slice them lengthwise (1 cm thick or less). Lay a layer of sliced eggplants in a colander and sprinkle coarse salt in between. Cover them with an upturned plate and press firmly so that the layers are pressed together tightly. Place a weight on top of the plate to keep pressing and let the eggplants extract their fluids for over an hour. Meanwhile, start preparing the tomato sauce by thoroughly washing the Premium Greek Tomatoes “Lucia”, scribe them cross-shaper lightly at the bottom and add them in boiling water for 15-20 seconds. This way, they can be more easily peeled. Remove them from the water, cut in four and remove the seeds.</p>
<p>Add extra virgin olive oil in a wide non-stick pan and saute the garlic cloves in moderate heat, after having them crushed. Add the thin-sliced onion and wait until it’s softened and the garlic has turned yellow – then add the Premium Greek Tomatoes “Lucia”, a few basil leaves, salt &amp; pepper and let it cook in moderate heat for 10 minutes, keeping the lid closed.</p>
<p>Rinse thoroughly the eggplants (after having them pressed for over one hour) until the salt is removed. Squeeze them firmly in your hands to remove as much water as possible, then place them on an absorbent paper to eliminate what’s left of it. Once dry, fry them in olive oil and place them again on absorbent paper until they shed off the excess oil. Save the most presentable (4 for each dish decoration) and slice the rest into thin strips. Remove half the tomato sauce and keep it warm. Add the eggplant strips in the pan with the remaining sauce.</p>
<p>We have already put a pot with plenty of boiling salted water. Add the pasta in a pan of already boiling well-salty water and let it boil for about 2 minutes less than the cooking time stated on the packaging. Drain the pasta “al dente” and save a cup of the boiled water. Add the pasta and the Premium Greek Tomatoes “Lucia” in a frying pan and saute for approximately 3 minutes, occasionally stirring and adding some of the boiled water to maintain its fluidity.</p>
<p>Serve the pasta on the dishes, adding the saved tomato sauce on top and decorating each one with 4 eggplant slices, basil leaves and the gated ricotta cheese.</p>

<p><strong>Instructions</strong></p>
<p>Boil medium salty water in a pot, considering that spaghetti are accompanied by a very tasty pancetta and cheese sauce. Add the spaghetti to the boiling water.</p>
<p>Cut the pancetta into cubes or strips and fry in oil until it’s crisp and the fat becomes clear. Remove from stove and let it cool slightly. Beat the eggs in a large deep pan, add the cheese and pepper, as desired. Just before you drain the spaghetti, add the fried pancetta to the mix. Season again with salt, if required.</p>
<p>Drain the spaghetti and add it to the pan, stirring it well.</p>
<p>Spahetti alla Carbonara can be served at once, adding more cheese and black pepper on top, if desired.</p>
<p><strong>Tips</strong></p>
<p>Skip the oil when you fry the pancetta by using a non-stick pan for a lighter recipe result.</p>
<p>Smoked pancetta has less fat than the beef cheek.</p>
<p>Whipped eggs should never be mixed with the spaghetti above the stove or it would create an omelet!</p>
<p>Mixing eggs and spaghetti should be only done after draining the pasta.</p>
<p>The original recipe does not contain cream. The combination of cheese and eggs is enough to give the desirable creamy effect.</p>

<p>Join us to taste the original Carbonara recipe, as “it should be” – with all the right ingredients, including pancetta but not cream! – and even cook it for your friends, after watching the cooking process and the dish preparation first-hand, for a unique experience that happens only once a year!</p>
